7. Green Chile Cheeseburger
New Mexicans adore chiles, so it’s no surprise that this southwestern state is the birthplace of the green chile cheeseburger. Chiles are one of New Mexico’s state vegetables, and they’re given the chance to shine in this dish. Order this special burger and you’ll get a regular cheeseburger topped with green chile sauce. The sauce varies from chef to chef – it can be a liquid, salsa-like concoction or contain chunky pieces of Hatch or poblano chiles, which makes a much spicier burger. The cheese on top brings relief from the green chile heat and completes the dish.
