5. Chile Relleno
Delicious chile rellenos are battered and fried hot peppers stuffed with minced meat and cheese. Although chile rellenos were invented in Mexico, the American version of this dish is extremely popular in New Mexico. The American version uses smaller, spicier local Hatch chiles instead of the traditional poblano peppers, then tops the dish with red chile sauce, green chile sauce, or mole. “Red or green?” is one of the most frequently asked questions in New Mexican restaurants. Can’t choose? You can always ask for it Christmas style, and you’ll enjoy a mix of both red and green chile sauce.
