Cafe de olla is a Mexican delicacy, and is more about the preparation rather than the coffee itself. To be considered authentic, the coffee must be served in an earthenware or clay mug, which is thought to complement the taste of the coffee.

The coffee is usually served with cinnamon sticks as a garnish, and sweetened with panela or piloncillo, which are both different types of raw, unprocessed sugar. It’s a great way to warm up on a winter day in the Mexican highlands, which unlike the coastal areas, can get quite cold.
