Korma

Korma is a type of curry dish which has been present in Indian cuisine since Mughal’s ruled the Indian subcontinent. The dish is at least 500 years old. There are many different types of korma, but essentially all that is required is that the meat is braised with yogurt or cream before being mixed in with the rest of the spices and vegetables.

Korma requires a careful hand because if the chef isn’t gentle, the dairy used to marinate the meat will curdle and the texture will become unpleasantly lumpy.
