Chana masala

Chana masala is another super popular vegetarian dish that can be found all over the world. At its heart, it’s simply a sour-spicy chickpea curry, which is an easy dish for a home chef to master.

However, in order to be authentic chana masala, it requires the use of a variety of chickpea typically not found outside of India – the chana from the dish’s name. The chana masala that you would order in a North American Indian restaurant is usually made with larger chickpeas known as chole, which aren’t as small and firm as chana.
