Kofta

If you’ve ever traveled in the Middle East, the Balkans, or anywhere in Asia, chances are you’re already familiar with kofta – often spelled kufta, or qofta. Made of minced ground meat mixed with various additions, kofta is incredibly versatile, and there are thousands of variations that mix up the central meat used, as well as the cooking method and spices.

In India, chefs have perfected koftas made with no meat at all, using potato or even banana as the central ingredient. Indian koftas are often served with a spicy gravy, and either rice or bread.
