Crappit Heid

Many unique Scottish dishes use ingredients that would usually be thrown away. Crappit heid is a traditional fish dish made of stuffed and boiled fish heads. It was first invented in the Highlands along the North Sea coast, where fishermen would use the parts of the fish that they couldn’t sell to make their own supper. The filling is made of oats, suet, onion, and pepper, which is then stuffed into the heads and boiled in seawater until cooked.
