Rumbledethumps
This dish, made with the Scottish staples of cabbage and potato, has an amazingly unusual name – rumbledethumps. It’s the perfect way to use up leftovers – cooked cabbage is sautéed with butter and onions, then layered in a baking dish with mashed potatoes, and topped with a hearty sprinkling of cheese. It’s often served as a side to roasted meat.
