Bulgogi

It seems unbelievable, but bulgogi, which is what most people think of when they think of Korean cuisine, is actually quite new to South Korea. It originated in North Korea, and traveled south with immigrants following the liberation of the Korean peninsula in 1945. It immediately became a popular dish – who can resist fire-grilled meat that you get to cook yourself!

At Korean barbeque restaurants, thinly-sliced bulgogi is marinated in soy sauce, sesame oil, and peppers, and tenderized with pureed pears or onions. Then the meat is given to the diners, who roast it over the grill themselves.
