Naengmyeon
Another popular Korean noodle dish is naengmyeon – handmade noodles that are served in a cold broth, and garnished with a variety of toppings that include cucumber, Korean pear, and pickled radish.
These homemade noodles are the dish’s signature. They’re usually left uncut, as a symbol of longevity, but you can ask for yours to be cut before they’re served. The beauty of this dish is in its versatility. You can order the soup plain with minimal toppings, or go all out and order your naengmyeon topped with spicy gochujang, succulent fish, or even (of course) kimchi.
