Tteok-bokki

If you stumble across a street stall or snack bar serving what looks like short, thick spaghetti noodles in sauce, you’ve found the Korean favorite tteok-bokki. Tteok-bokki are glutinous rice cakes, which are formed into thick cylinders and served in a puddle of delicious sauce. Usually gochujang forms the base of the sauce, but there are less spicy options that use soy sauce as a base.

There are tons of variations, which can consist of additional ingredients or even a completely different sauce. Tteok-bokki is popular Korean fusion fodder. Chefs will get creative using Italian alfredo or rosé sauce instead of gochujang, or add in cool new ingredients.
