Bacalao

A popular fish that’s enjoyed all over Spain is bacalao, which is cod that has been salted and dried. You can find it in grocery stores, but it might not look that appealing at first – the flayed fish filets are stinky and flat as a board.

It’s not until you get them home and begin to soak them that they start to reveal their appeal. Once it’s softened, the bacalao can be added to many different dishes, including bacalao al pil-pil, which is a popular Basque dish that uses olive oil and pan drippings to make a deliciously emulsified sauce for the fish.
