Paella

Paella is usually associated with Spain as their national dish, but it hasn’t always been served country-wide. It originated in the region of Valencia, and has experienced a huge surge in popularity in the last few decades. Paella is usually prepared using the traditional paellera, a huge cooking pan that sits over an open fire.

Meat, or seafood, is first sautéed in the pan, then water is added to make a broth. Rice is added, and the dish is finished as soon as the rice is cooked. If you want the most authentic paella, head to Valencia – many city festivals feature massive paellas which feed thousands.
