It makes sense that in a region as hot as Andalusia, people will do anything to try and cool down in the humid summer months. Cold soup, which to most seems unappealing, has made Andalusia famous.

Their signature dish, gazpacho, is a delicious vegetable soup that’s served cold, often garnished with topping such as cubed veggies, chopped ham, or a chiffonade of fresh herbs. Gazpacho is most often made with tomatoes, but it can be made of any vegetable – the only requirement is that the dish should be thickened with stale bread.
