Cultured Palate: Dishes from Spain
| January 10, 2018
Orujo
Orujo is a delicious liquor that was invented by thrifty Spaniards who wanted to find a way of using the grape skins, seeds, and stems leftover from their winemaking. They barreled up this waste – which is called must – and fermented it. The resulting liquor is distilled down into a heady, sweet drink. Every year, the town of Potes in Galicia hosts the Festival of Orujo, celebrating the best of the year’s harvest.
