Cultured Palate: Dishes from Spain
| January 10, 2018
Leche Frita
This is a dessert that’s popular all over Spain, but originated in northern Spain, where cold nights would have made this even more appealing. Leche frita, which literally means fried milk, is actually a deep-fried fritter made out of milk that has been thickened with sugar and flour until it forms a paste. The paste is cubed, breaded, fried, and sprinkled with cinnamon sugar before being served.
