2. Razor Clams
Digging for razor clams is fun for many people who grew up in the Cascadia region’s coastal towns. They’re like regular clams, except more aggressive – you have to dig to find them, and they won’t come easily. Once they’ve been caught, prepare them by battering and frying them in butter. You can also use them in a delicious razor clam chowder or an Asian-inspired stir-fry; they taste particularly lovely complemented with a tangy sauce.
