6. Alaskan Ceviche

Although ceviche originates in Peru and is often served in sunny climates, this dish is extremely popular in the northernmost part of the Pacific Northwest: Alaska. Alaskan ceviche is made with native Pacific Northwestern fish similar to the ones used in South America (halibut, rockfish, or lingcod). The fish is chopped and combined with lime juice, which makes the meat firmer and less “fishy” as it soaks in citrus. Alaskan ceviche is frequently scooped up with tortilla chips or used to top tacos.
