4. Geoduck
If you’ve never seen geoduck before it’s appeared on your plate, you’ll be surprised when you see it for the first time. The gigantic mollusk makes a tasty dinner once prepared but is incredibly strange to look at. However, once you get over geoduck’s weird appearance, the crunchy texture and briny flavor will make you a fan. Look for it in upscale restaurants, where the chefs know how to expertly tenderize and prepare it to bring out the ocean-y flavor.
