Sisig
People in the Philippines love pork so much that they strive to use every single part of the pig. Sisig is a great dish that utilizes many underused cuts, including the head and liver, which are then seasoned with the classic Filipino flavors of chili and calamansi juice.
The dish has been around since the 17th century, but it was reinvented by a woman from Angeles City named Lucia Cunanan, who revolutionized the dish by cooking it on a sizzling plate, so it became crispy throughout.
