Filipino food is full of delicious noodle dishes, but one of the most interesting is pancit canton, which is made with a variety of meats including Filipino longganisa sausage. It’s based on Cantonese chow mein, where a variety of meats and vegetables are stir-fried in a wok before adding sauce and noodles. Like many other Filipino dishes, it’s finished with calamansi or lemon juice for a sour kick. Look for it at any Filipino celebration, or find it at a roadside noodle stall (panciteria).
