Arroz Caldo
If you’re feeling under the weather, a steaming hot bowl of arroz caldo is just what the doctor ordered! It’s a savory porridge, similar to congee, made out of gingery chicken broth, in which rice has been boiled until it’s completely broken down. For a bit of extra protein, add some chopped, hard-boiled eggs, or sliced, shredded meat. At the end, a wedge of lemon or calamansi is squeezed over the bowl, because it wouldn’t be proper Filipino food without a sour twist!
