Chicken Inasal

If you pass a restaurant or food stall that’s serving up grilled chicken anywhere in the Philippines, chances are they’re grilling up a batch of chicken inasal – a popular snack that originated in Balocod City.

What differentiates it from other grilled chicken is the marinade. The meat is brined in a tangy mix of lemongrass, garlic, coconut vinegar, and calamansi, then basted with butter and annatto seed oil, which gives it a beautiful yellow tinge. It’s easy enough to make at home, but grilling it over charcoal outdoors gives it a lovely smoky taste.
