Buko Pie

You might associate pie with cooler climes, but pie is so universal that it’s eaten all over the globe, including in the Philippines. A firm favorite in this part of the world is buko pie, which is a kind of coconut cream pie made with young coconut. The fruit is mixed with condensed milk, but lacks the meringue that is usually used in the American version.

As with many great fusion dishes, buko pie came about when a Filipino woman visited America. When she returned to her native country, she tried to recreate a traditional apple pie using local ingredients and buko pie was born! Buko pie is now particularly popular in Luzon in the Philippines, and is a firm favorite in Laguna Province.
