You can put anything in a pie, including fish. It might be surprising to think that some of the world’s best pies are made with the fruits of the sea. One of these is coulibiac, a Russian pie that is made with salon or sturgeon. The fish is mixed with hard boiled eggs, mushrooms, onions, dill, and grains for a creamy but hearty finish.

A twist on the original recipe features sturgeon spinal marrow — a delicacy in Russia. You may never have heard of it, but this is one of the most famous pies in the world. Auguste Escoffier, the iconic French chef, adopted the dish and wrote about it in his seminal work The Complete Guide to the Art of Modern Cookery.
