Another ramen-ya that specializes in delicious, dipping tsukemen-style ramen is Michi, which is was opened in 2009 by a 22-year-old ramen master named Nagahama-san. The rich, cloudy broth is made with pork, chicken, and seafood, which gives it a punch of umami flavor. The noodles are not made in house, but the broth (of course) is, and it changes on a daily basis. Fans report that it varies widely in flavor depending on what meat the chef is able to procure. Toppings are plated separately, so you can really taste each ingredient.
