Aburagumi Sohonten is one of the chains that has popularized abura soba, and they do an excellent version of this unique dish. Instead of being topped with broth, when you order abura soba, you’ll receive a bowl of noodles and toppings with a rich, gravy-like sauce called tare hidden at the bottom. Mix up the noodles with the tare, add chili oil to taste, and enjoy.
