13. Tsuta – Sugamo, Tokyo
Tsuta was the very first ramen-ya in the world to be awarded a Michelin star, and their sudden rise to fame hasn’t changed the quality of their ramen, or the quantity of their seats at all. There are still only nine seats in the entire restaurant.
To eat here, you’ll have to get there first thing in the morning and get one of the coveted tickets that entitle you to return later in the day for a bowl of their delicious soba-style noodles (made with buckwheat flour) in a light, clean shio or shoyu broth.
