Cultured Palate: Dishes from France
| August 9, 2017
Andouillette
Andouillette is truly something that is uniquely French – it’s almost impossible to find authentic andouillette sausage outside of France. Andouillette sausage is made from pork or veal organ, and offal meat, which gives it a unique and chewy texture that’s often off-putting to first timers.
Andouillette sausages are sold uncooked, and they can be grilled, fried, or boiled, then served hot or cold. The texture is often tough, but it’s definitely something to try if you’re a fan of dishes like tripe and tongue.
