Bouillabaisse
Bouillabaisse is a traditional French seafood dish, which makes use of whatever happens to be freshly caught that day. It originates from the port city of Marseilles and was originally the dish of choice for fisherman, who made it with whatever fish they hadn’t managed to sell by the end of the day.
A good bouillabaisse will have a mix of firm-fleshed fish, softer filets of fish, shellfish, and squid, all cooked together in a light vegetable broth. Eat it with plenty of delicious baguette for dipping.
