Cultured Palate: Dishes from France

Tarte tatin
All great French dishes come with their own signature cooking vessel, and the tarte tatin is no different. Made in a tatin pan, the tarte tatin is a simple dessert where fruit is placed on the bottom of the pan, then covered in batter. While it cooks, the fruit caramelizes as the batter bakes, making a cake that’s imbued with all that delicious fruit juice.
To serve, the cake is flipped over so the fruit sits on top. Apples are a traditional pick, but it can be made with any firmer fruit like pears, or even pineapple.
