Cultured Palate: Dishes from France

Coq au vin

Coq au vin is the most traditional example of excellent French cooking. It’s simply chicken braised in red wine. But when done right, the meat is fall-off-the-bone tender and deeply flavorful. Coq au vin was originally created in Burgundy, a region of France known for its rambling vineyards and amazing wine, so it makes sense that red wine is a key component of this dish.

Coq au vin is also popular because it uses less tender chickens, which means that the dish is not only delicious, it’s budget-friendly as well.
