Cultured Palate: Dishes from France

Kouign-amann
Kouign-amann has been described as a pie made of flaky croissant dough smothered in sugar. It was originally a dessert from Brittany, a region located in the furthest west part of France.
Many poor Breton parents would save bits of bread dough throughout the week to make this dessert on Sunday. The dough would be covered in sugar, then folded into molds. The steam created during cooking separates the layers and creates a deliciously dense yet flaky pastry.
