Sole Meunière
Sole meunière is a traditional preparation for the delicious fresh sole. Meunière actually means “miller’s wife,” which is due to its use of flour as a light batter. The filet of sole is dredged in flour, then pan-fried briefly before being covered in a light sauce made of butter, parsley, and lemon.
Good sole meunière is beautiful in its simplicity. The butter and lemon serve to enhance the natural fresh and tender taste of the fish instead of covering it up.
