Ile flottante
Ile flottante (floating islands) is a fanciful name for a simple French dessert. It’s a cooked, sweetened egg white which sits in a puddle of delicious crème anglaise, sometimes drizzled with fruit coulis or caramel.
This is a popular dessert all around Europe, where it’s known by various names like Schnee-Eier (“snow eggs”) or zupa nic (“nothing soup”).
