Cassoulet
Cassoulet is a delicious, hearty dish that was originally created by chefs in the Languedoc region of France. It’s a simple stew made of meat, pork skins, and white beans. The dish is cooked in a cassole – a wide mouth earthenware vessel which gives the dish its name.
Although it has become common to see cassoulet made with all kinds of different meats, duck, pork, and partridge are the most traditional. The cities of Carcassonne, Castelnaudary, and Toulouse all have their own regionally specific types of cassoulet.
