Enchiladas
Enchiladas are a dish that you’ve probably had before, but there’s no substitute for authentic enchiladas served with real homemade tortillas and scratch-made sauce. Enchiladas have evolved from the early days pre-conquest, when they were simply made of a whole small fish, rolled up in a corn tortilla.
In Mexico now, you can find dozens of different variations depending on where you are. Generally, enchiladas will make use of local specialities, and can include anything from veggies, to meat, and even a béchamel style sauce, which can be found in enchiladas suizas (Swiss-style).
