Another popular snack food that can be found all over Mexico is elotes, grilled corn that’s slathered in a delicious mix of mayonnaise, butter, fresh cheese, chile, and lime.

If you don’t mind the mess, you can eat your corn right off the cob, or ask for it to be made into esquite, which is where the kernels are removed from the cob, mixed in with the other ingredients, and served in a little cup. With each bite, you taste the sweetness of the corn, which is complemented by the salty cheese, tangy lime, and just a hint of fire from the chile powder.
