Gorditas are a favored snack of many Mexicans, because they’re just so easy to make, and there are so many ways to customize them.

Gorditas are a thicker tortilla, cooked on a griddle or fried, which is then stuffed with a variety of fillings, depending on your taste. You can put anything inside, but some popular favorites are a simple gordita with refried bean and cheese, or even scrambled eggs, for breakfast. In fact, many home chefs make these to use up leftovers.

If you can, try to find a gordita made out of blue corn — it’s a delicious and unique treat.
