Tamales
Tamales are another dish that’s popular all over Mexico, with each region specializing in their own unique variation.
At their heart, tamales are simple — masa corn dough is stuffed into a banana leaf or a corn husk, then steamed until cooked through. The filling is where it gets interesting. Make sure to try regional variations like tamales de ceniza (made with ash) from Colima, or sweet tamales made with fresh fruit from Queretaro.
