Cultured Palate: Dishes from Japan

10. Ramen Noodles

Although it seems quintessentially Japanese, ramen actually evolved out of Chinese cuisine. There are dozen and dozens of different variations with different types of noodles, broth, and topping interchanging to make endless delicious combinations. The most common types are shoyu (soy sauce) or shio (salt broth) ramen. Another delicious option is tonkotsu, which is a rich broth made out of long-simmered pork bones. Bowls of broth and toothsome, chewy noodles are then topped with a variety of ingredients which can be personalized to the diner’s taste. Common options are fatty pork belly, eggs, steamed fish cake, or vegetables.
