13. Mochi
Everyone should see mochi being made at least once, so they can fully appreciate every bite in the future. Mochi is made in a ceremony called mochitsuki, where two chefs pound and turn steamed glutinous rice in a gigantic mortar until it takes on a uniform, jelly-like consistency. Then the mochi are shaped into unique shapes and flavored to represent different holidays and occasions.
