12. Tonkatsu
Tonkatsu is classic Japanese comfort food, a hearty protein combined with light breading and a delicious sauce. Tonkatsu is traditionally made with a flattened pork cutlet, pounded to a quarter-inch thickness so that the ratio of breading to meat is just right. Then the whole works is covered in a light drizzle of sweet tonkatsu sauce, with a handful of shredded cabbage on the side.
