11. Soba
Soba is another type of noodles common in Japan, but are made primarily with buckwheat instead of wheat flour. This gives the noodles a nutty taste, excellent texture, and makes them incredibly versatile. You can order soba noodles in your soup, or have them on their own with a light dipping sauce, which is the best choice for a hot summer day. The best soba noodles are served by chefs who make their own from scratch, which is a difficult process, but has been mastered by chefs like Eisuke Muto, who runs Muto restaurant in Nihonbashi, Tokyo.
