10. Picanha
One of the most popular aspects of Brazilian cuisine outside of Brazil is churrasco, their unique take on barbequed meat. In Brazil, if you visit a churrasqueria restaurant, you’ll see that their meat is all grilled on skewers or balanced on a metal grill, and rotated like a giant spit. This gives the chef greater control over the temperature.
The most popular cut of meat in Brazil is picanha, a cross-section of rump, loin, and round meat. Brazilian chefs also tend to marinate their meat more than North American chefs, often reaching for a mixture of sherry vinegar, oil, spices, and salt that they rub on the meat at least an hour before it touches the grill.
