4. Feijão Tropeiro

Feijão Tropeiro, which translates into English as “Cattleman’s Beans,” was originally a staple of Brazilian explorers whose job it was to transport cattle and materials through the vast, unexplored countryside.

Feijão Tropeiro is made with collard greens, beans, meat, and manioc flour — sounds like a lot of work, but it’s really not. Feijão Tropeiro is often made with leftovers, which means that there’s a lot of variation between recipes. Traditionally, the dish uses carioca beans, and the meat is calabresa sausage (or chorizo sausage, depending on where you’re eating it).
