9. Moqueca
From Espirito Santo in the south to Bahia in the north, Moqueca is a popular dish all over Brazil’s coastal region.
Like most coastal dishes, this warming stew features fish as a primary ingredient. Made in a terracotta dish called a capixaba, the ingredients in moqueca vary depending on your preference, but it’s generally made with saltwater fish like small sharks, cod, or swordfish. The stew’s reddish-orange color is due to the addition of red palm oil, an ingredient that’s found in many Brazilian dishes because of its beautifully earthy flavor.
