Cultured Palate: International Dishes from Brazil
| January 31, 2018
8. Vatapá
Vatapá, another typical Bahian dish, is a coconut milk and shrimp stew that’s either served solo or used as a filling for acarajé. This dish is unique because it uses two types of shrimp (dried and fresh), and it uses bread as a thickening agent. It’s often made by baianas, women who sell food on the streets of Brazil and are known for their all-white garb. If it’s not served inside an acarajé, eat it with white rice.
