7. Acarajé
This deep-fried treat known as acarajé is found all over Brazil, but it’s a particular favorite in the Bahia province, a coastal region known for being the cultural heart of the country.
Acarajé is made of peeled black beans mashed with onions, which is then shaped and fried in red palm oil before being stuffed with various fillings. The beans have to be peeled before they can be used, which makes this a very time-consuming dish. Typically, it’s prepared and sold on the street by women dressed all in white, known as baianas.
Acarajé is also used in Candomblé, an Afro-Brazilian religious tradition, as an offering.
