Egg Drop Soup

Egg drop soup may seem complex, but it’s actually not that difficult. A simple soup is made with chicken broth, vegetables, and tofu is prepared. Then at the very end of the cooking process, a thin stream of raw eggs is drizzled into the soup. As the eggs cook quickly, they make thin white strands in the soup, which give the soup its name.

In North America, cornstarch is sometimes added to give the soup a thicker consistency, but in China, where it originates, typically the dish has a thinner consistency and slightly different toppings.
